Guajillo Sea Love Sea Salt Chilaquiles

Chilaquiles are a traditional Mexican breakfast that Jeanette learned to make after college friends came back from a semester study abroad in Guadalajara. The word comes from the Nahuatl language meaning chilis and greens. And in Guadalajara this dish is made in a special cooking pot called a cazuela. Now we make this dish for breakfast with eggs or dinner with beans topped with our Guajillo Sea Love Sea Salt.

Ingredients

  • Your preference of Vegetable or olive oil

  • 1/2 chopped yellow onion

  • 4-5 quartered corn tortillas

  • 1 can black beans

  • Hot sauce, salsa, or a fermented hot sauce

  • Avocado, cojita cheese, or pulled chicken if desired

  • Cilantro, limes, pickled jalapeƱos, and pickled onions

  • Freshly squeezed lime juice

  • Guajillo Sea Love Sea Salt

Directions (Serves 1-2 people)

Heat oil in a medium skillet. 

Saute onions for 5-10 mins. 

Add corn tortillas and fry for 1-2 mins. 

Cover corn tortillas with hot sauce, stir to coat and simmer.

Add black beans or egg & cook for an additional few mins. 

Turn off heat. 

Add toppings such as avocado, cilantro, cojita cheese, or pulled chicken. 

Top with Guajillo Sea Love Sea Salt.

Serve with pickled jalapeƱos or pickled onions if you desire.
